Post London

We just got back from a 9 day trip to London, England and Edinburgh, Scotland and we definitely enjoyed the food and being on vacation but now that we are back it is glaringly obvious that I need to get back on track. Both of us want to. 

I am also having issues with my work that I will not go into but it has had a bad effect the last couple of days because the stress has definitely made me binge eat. I have gone to Tim Horton’s for breakfast the last two mornings for breakfast and had pasta for lunch both days and a healthier dinner. My goal is to start afresh tomorrow and see how it goes. 

I also want to start exercising again. Until I can get my gym membership back I am going to try skipping and other exercises in the back yard and try and start walking more. I am considering trying to do the self a day thing while I do this but I may just keep it to once a week or month as updates on here. I am hoping I can start seeing results within the next couple of months. I am making it a short term goal to be 12-15 lbs down by the time my birthday rolls around in April! We are planning on another trip to Cuba in June or July and I would love to go down there feeling more confident in a swimsuit. 

Homemade Roasted Red Pepper Sauce

I was making a chicken chilli with a roasted red pepper base replacing tomatoes. The recipe called for jarred roasted red pepper but because of the problems my boyfriend has been having with his blood pressure I have been trying to make things myself since canned/bottled foods often have a high sodium content. The sauce ended up being amazing and provided great flavor for the chilli. I ended up keeping it a little chunkier than the recipe said and I still really loved how it turned out!
